The "devil" gave him 2 choices, why would the "devil" give choices, doesn't he want people's souls?

Its almost like that movie, Bedazzled, he got wishes then the devil gets his souls. Unfortunately for him, his granted wishes were so stereotypical.

Though, money is much more convincing than wishes or "your deepest desire". :p
 
I just don't see how someone could (in a face to face "trade" like that) actually give up his soul in return for something. :/

They don't realize they are "actually" giving up their soul. And, they don't even understand the significance of a soul.
