In order to render a scene the video card needs to rapidly swap textures, vertices, shaders, etc in and out of ram. Having enough memory bandwidth also means you are more likely to be able to toggle on AA/AF to get a better picture quality without drastically degrading performance. Most games these days will rarely push 256MB except on the highest settings. Even if you could fill a 1GB card with just a 128bit pipe, chances are you would not even get a playable frame rate.
