Basically (and this is very important) both servers are essentially PVP; however the difference is that one is open pvp, and one is not.
On a normal server, you can only attack a member of an opposing faction if they are 'flagged' for combat. To become flagged, you can simply either type "/pvp" or you can attack an NPC. If anyone heals you, or otherwise helps you in battle, then they too automatically become flagged. This is also how raids work.
Note: Guards of the opposing faction will ALWAYS fight you, no matter what.
On a PVP server the countries and areas are split up into zones. Some zones' names will appear green in color, and this means it is a safe zone for you to do business. All major cities will be green to their respestive faction's members. A yellow color means the area is 'contested', which is where zones are fought and won for. Depending on who is controlling this zone at a certain time this area can be a very dangerous place to adventure in.
Both servers will support raids and battlegrounds.

At first our guild supported Normal servers as the official servers we would play on, but now we're asking for your input.
We have many married couples who will not be able to play as often as some of our other members, and I think it will become a real hassle for them if they login for just a couple of hours on a weekend only to end up dying many times to finish just one or two quests. This was our main concern, and initially why we chose the safer 'normal' server.
However, some of our married couples are actually asking to play on an open PVP server; as they feel this is where the real game is at. And, frankly, they're right.
It feels very strange to me to walk past an Undead character and not be able to fight them, nor them me; especially when the entire story surrounding Warcraft tells me that I'm at war with this race.
