This confused me:

You can have any number of gathering or mission crew skills but only one crafting crew skill. There are three crew skill slots, so you could technically have three gathering skills if you so choose.

To me, this seems like you can have three crew skills, up to 1 of those being a crafting skill. However, the first sentence seems to imply that we can learn all the gathering/mission skills.

You're right, that is poorly worded. You can only learn three crew skills, and only one can be a crafting skill. You can have any combination of gathering/mission skills you want up to a max of 3 total.
