is there an item worth chart, that way i dont get ripped off buying or selling stuff?

No there isn't. The best way is to check the rune traders/merchants/material traders before you sell something to make sure you aren't selling it for less than what they'll give you for it. You can usually sell something for a little less than the traders sell it. But these amounts fluctuate. If you are wanting to sell weapons or upgrades, you can do a price check here or on a GW forum and see what it is going for.
